  • 1 (14 or 16 oz.) package broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. 1. Prepare the broccoli by thawing it in the microwave for about 5 minutes, then drain well and cut large florets into smaller pieces.
  2. 2. In a mixing bowl, combine the broccoli with 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Mix thoroughly.
  3. 3. Spoon the mixture into a greased baking dish and top with the remaining cheddar cheese.
  4. 4. In another bowl, mix cracker crumbs with melted butter until moistened; sprinkle over the casserole.
  5. 5. Preheat the oven to 350°F (175°C) and bake for 45–50 minutes until bubbly and golden brown on top.
