  • 1 large red apple (Pink Lady, Fuji, Honeycrisp, or Jazz)
  • 6 celery stalks
  • ¼ cup dried cranberries
  • ¼ cup pecans, roughly chopped
  • 1 teaspoon Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons red apple vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine Dijon mustard, maple syrup, red apple vinegar, olive oil, salt, and pepper in a jar or salad shaker. Shake until well blended.
  2. Toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant; let cool.
  3. In a large bowl, mix sliced celery, coarsely chopped celery leaves, chopped apple, cranberries, and half of the toasted pecans. Season lightly with salt and pepper.
  4. Drizzle dressing over the salad and toss gently to coat.
  5. Serve immediately topped with remaining pecans.
