  • 10g active dry yeast
  • 300ml cold water
  • 250g unsalted butter (for laminating)
  • 200g dark chocolate (chopped)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the dough by mixing flour, salt, sugar, and yeast in a bowl. Gradually add cold water and knead until smooth. Let it rest for 30 minutes.
  2. For lamination, roll out the dough into a rectangle and place cold butter in the center. Fold the dough over the butter and seal edges. Roll out again and fold into thirds; chill for 30 minutes. Repeat two more times.
  3. Shape the croissants by rolling out chilled dough into a large rectangle and cutting into triangles. Place chocolate at the base of each triangle and roll towards the tip to form croissants.
  4. Let croissants proof for about 1 hour until doubled in size. Preheat oven to 200°C (400°F), brush with egg wash, and bake for 15-20 minutes until golden brown.
