  • 15.25 ounces white cake mix
  • 3 egg whites
  • ½ cup vegetable oil
  • ½ cup Greek yogurt
  • ¾ cup whole milk
  • 5.1 ounces instant vanilla pudding mix
  • 2 ¾ cups whole milk
  • 2 cups heavy cream
  • 3 tablespoons granulated sugar
  • 1 cup sweetened shredded coconut
  • Gel food coloring (pink, yellow, blue)

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the cake mix, egg whites, vegetable oil, Greek yogurt, and whole milk. Mix until smooth.
  2. Divide the batter evenly into three bowls; add food coloring to each bowl and stir.
  3. Pour colored batters into a greased 9×13 inch baking pan in layers for a marbled effect. Bake for about 25 minutes until a toothpick comes out clean.
  4. While cooling, whisk together instant vanilla pudding mix with 2 ¾ cups of whole milk and refrigerate until thickened.
  5. Once cooled, poke holes in the cake and pour the pudding over it.
  6. Whip heavy cream with sugar until stiff peaks form; spread over the pudding layer and top with coconut and optional decorations.
  7. Chill for at least 4 hours before serving.
