  • 1 cup chow mein noodles
  • 1 1/2 cups milk chocolate chips

  • 1/2 cup milk or dark chocolate chips
  • 1 tsp coconut oil or butter (optional)
  • Pastel candy eggs (2–4 per cookie, depending on size)
  • Optional: Colorful sprinkles or nonpareils

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, and salt.
  3. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Mix in the egg and vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough and flatten them into disks on the baking sheet. Bake for 8–10 minutes or until edges are set. Allow cooling completely.
  6. For the nests, melt chocolate chips in increments until smooth; coat chow mein noodles in melted chocolate.
  7. Shape noodle clusters into nests on cooled cookie bases and fill with additional melted chocolate before adding pastel candy eggs.
