  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 1 tablespoon milk (optional)
  • 4 large (50 grams each, out of shell) eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Stir in the rolled oats and flour until combined. Press this mixture into the bottom of an 8×8-inch greased baking dish.
  3. Bake the crust for about 15 minutes until lightly golden. Remove from the oven and let cool slightly.
  4. In another bowl, whisk together the eggs, honey, lemon zest, lemon juice, and flour until smooth.
  5. Pour the filling over the cooled crust and bake for an additional 20-25 minutes or until set.
