Ingredients

  • Ready-rolled shortcrust pastry

  • Caster sugar
  • Eggs

Instructions

  1. Preheat the oven to 180°C (350°F) and roll out the shortcrust pastry on a floured surface until about 3mm thick. Cut circles to fit your tartlet tins and press them in gently, pricking the bases.
  2. Bake for 15 minutes or until golden brown. Let cool completely.
  3. For the lemon curd, whisk together eggs and caster sugar in a bowl. Stir in lemon juice and zest.
  4. Melt butter in a saucepan over low heat; mix in the lemon mixture, stirring constantly until thickened (about 10 minutes).
  5. Spoon lemon curd into cooled pastry shells and let set in the fridge for at least an hour.
  6. Dust with icing sugar before serving.
