  • 8 medium-large organic lemons
  • 4 cups fruit juice
  • 4 ¾ cups water
  • 2.43 lbs white sugar

Instructions

  1. Thoroughly wash the lemons and peel only the yellow skin using a vegetable peeler.
  2. Place the lemon peels in a large glass jar and cover them with the fruit juice. Seal tightly and let infuse in a dark place for 25 days.
  3. Strain the mixture through a fine mesh strainer into a bowl to remove the peels.
  4. In a large pot, heat water until small bubbles form, then stir in sugar until dissolved. Turn off heat after about 2 minutes.
  5. Allow the syrup to cool slightly before adding it to the strained lemon infusion; mix well.
  6. Cool to room temperature before bottling in glass containers and refrigerate.
