  • 1/2 teaspoon baking powder
  • 1 cup Lucky Charms vegan marshmallows
  • 1/2 cup white chocolate chips (optional)
  • Rainbow or gold sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. Add vegetable oil and mix thoroughly.
  5. Gradually incorporate flour, baking soda, and baking powder until just combined.
  6. Gently fold in the vegan marshmallows and white chocolate chips.
  7. Scoop dough into balls and place them on the prepared baking sheets, spacing them about two inches apart.
  8. Bake for 9–11 minutes or until edges are set but centers remain soft.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
