  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ÂĽ teaspoon ground nutmeg
  • 1 cup unsalted butter (softened)
  • Âľ cup sugar
  • ½ cup honey
  • 3 eggs
  • 1 ½ teaspoons vanilla extract
  • Âľ cup sour cream
  • 8 ounces cream cheese (softened)
  • ÂĽ cup honey (for frosting)
  • 3 cups confectioners’ sugar
  • sliced almonds for garnish

Instructions

  1. Preheat the oven to 325°F and line a 9×9 baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and nutmeg; set aside.
  3. Beat softened butter until fluffy. Add sugar and honey; continue beating until light.
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Gradually mix in dry ingredients until just combined. Then add vanilla and sour cream.
  6. Pour batter into the prepared pan and bake for 40–50 minutes until a toothpick comes out clean.
  7. While cooling, prepare frosting by beating cream cheese and butter until fluffy; mix in honey and flavorings.
  8. Gradually add confectioners’ sugar until smooth.
  9. Cut cooled cake into cubes and layer in mason jars with frosting and sliced almonds.
