  • 1 lb chicken breast, sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1/2 cup kalamata olives, pitted
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season chicken with salt, black pepper, paprika, and oregano.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken for about 5–7 minutes until golden brown and cooked through. Remove from the skillet.
  3. In the same skillet, sauté red and yellow bell peppers, zucchini, red onion, and minced garlic for about 3–4 minutes until tender-crisp.
  4. Add halved cherry tomatoes and kalamata olives; cook for an additional 2–3 minutes until tomatoes soften.
  5. Return the chicken to the skillet and toss to combine everything.
  6. Drizzle with lemon juice and sprinkle with parsley before serving.
