  • 3 sweet peppers
  • 1 tablespoon olive oil
  • 1/2 cup grape tomatoes, quartered
  • 2 cloves garlic, crushed
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 cup cooked diced chicken
  • 6 oz marinated artichoke hearts
  • 1 cup cauliflower rice
  • 1 cup fresh baby spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped

Instructions

  1. Preheat your oven to 375°F.
  2. Microwave the halved peppers for about 4 minutes to soften.
  3. In a large sauté pan, heat olive oil and sauté crushed garlic until fragrant.
  4. Add quartered grape tomatoes, oregano, and basil; cook for another minute.
  5. Stir in marinated artichokes and sun-dried tomatoes; simmer briefly.
  6. Add cooked chicken and cauliflower rice; season with salt and pepper.
  7. Incorporate chopped spinach until wilted; remove from heat to cool slightly.
  8. Stuff each softened pepper with the mixture and place in a baking dish.
  9. Bake for about 10 minutes or until peppers are tender.
