- 1 tablespoon olive oil
- 1/2 cup grape tomatoes, quartered
- 2 cloves garlic, crushed
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1 cup cooked diced chicken
- 6 oz marinated artichoke hearts
- 1 cup cauliflower rice
- 1 cup fresh baby spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- Preheat your oven to 375°F.
- Microwave the halved peppers for about 4 minutes to soften.
- In a large sauté pan, heat olive oil and sauté crushed garlic until fragrant.
- Add quartered grape tomatoes, oregano, and basil; cook for another minute.
- Stir in marinated artichokes and sun-dried tomatoes; simmer briefly.
- Add cooked chicken and cauliflower rice; season with salt and pepper.
- Incorporate chopped spinach until wilted; remove from heat to cool slightly.
- Stuff each softened pepper with the mixture and place in a baking dish.
- Bake for about 10 minutes or until peppers are tender.
