  • 2 slices artisan bread (sourdough or ciabatta)
  • 1 cup fresh mozzarella cheese, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 2 tsp olive oil
  • 1 tsp dried oregano

Instructions

  1. Brush one side of each slice of bread with olive oil.
  2. On the un-oiled side of one slice, layer the mozzarella and feta cheeses generously.
  3. Add sun-dried tomatoes and fresh spinach on top of the cheese layers; sprinkle with dried oregano.
  4. Place the second slice of bread on top with the oiled side facing out.
  5. Heat a skillet over medium heat. Grill the sandwich for 3-4 minutes until golden brown. Flip carefully and grill the other side for an additional 3-4 minutes until crispy and cheese melts.
  6. Slice and serve warm.
