  • 4 chicken drumsticks (bone-in)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 tablespoons butter
  • 1 ½ cups uncooked rice
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • Fresh parsley (for garnish)
  • Paprika
  • Dried thyme
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 350°F. Spread chopped onion in a baking dish and top with butter; bake for about 15 minutes until browned.
  2. While onions bake, mix dried thyme, garlic powder, paprika, onion powder, salt, and black pepper in a bowl. Rub onto chicken drumsticks.
  3. Once onions are ready, layer uncooked rice over them. Pour in chicken stock and water; add minced garlic and stir gently.
  4. Place seasoned drumsticks on top of the rice mixture. Cover with foil and bake for 30 minutes.
  5. Remove foil, spray oil on drumsticks, and bake uncovered until fully cooked.
