  • 1/2 cup Soy Sauce (low sodium preferred)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar
  • 1.5 cups Cooked Rice (white, brown, or jasmine)
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)

Instructions

  1. Prepare all ingredients by chopping the bell pepper and green onions.
  2. Heat oil in a skillet over medium-high heat. Add chicken pieces and cook until browned (5-7 minutes).
  3. Stir in minced garlic for about 30 seconds until fragrant.
  4. Mix soy sauce, pineapple juice, honey/brown sugar, vinegar, and cornstarch in a bowl to create the sauce.
  5. Pour the sauce over the chicken, then add pineapple chunks and diced bell pepper. Simmer for about 10 minutes until heated through.
