  • 4 cups cooked brown or white rice, chilled
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • Salt, to taste
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons coconut oil, divided
  • 3 tablespoons soy sauce (use gluten-free if needed)
  • 1 tablespoon honey
  • 1 1/2 cups fresh pineapple, cubed (or canned unsweetened)
  • 1/2 cup frozen peas
  • 2 tablespoons fresh lime juice
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Season chicken lightly with salt and let rest for 10–15 minutes. Pat dry before cooking.
  2. Heat 2 tablespoons coconut oil in a wok or skillet over medium heat. Add chicken and cook for 5–7 minutes until browned and cooked through. Remove from pan and set aside.
  3. In the same pan, add remaining 1 tablespoon coconut oil. Sauté onion for 3–4 minutes until translucent. Add bell peppers, garlic, and ginger; cook for an additional 2–3 minutes.
  4. Deglaze with soy sauce. Stir in chilled rice, honey, pineapple, and cooked chicken. Toss well and reduce heat to low; cook for about 5 minutes while stirring occasionally.
  5. Add peas and lime juice; stir gently. Turn off heat; allow residual heat to warm through peas.
  6. Serve hot, topped with chopped green onions and sesame seeds.
