  • 2 cups jasmine or basmati rice
  • 2 tablespoons vegetable oil
  • 1 pound chicken breast (cut into bite-sized pieces)
  • 1 can (20 oz) pineapple chunks in juice (drained)
  • 1 cup bell peppers (diced)
  • 1 cup onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger (grated)
  • ½ teaspoon black pepper
  • 1 tablespoon sesame oil
  • Green onions for garnish

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice with 4 cups of water. Bring to a boil, cover, and simmer for 18-20 minutes until water is absorbed.
  3. While rice cooks, heat vegetable oil in a skillet over medium-high heat. Sauté chicken pieces seasoned with black pepper until golden brown, about 5-7 minutes.
  4. Add diced onion, bell peppers, and minced garlic to the skillet; cook for another 3-4 minutes.
  5. Stir in drained pineapple chunks, soy sauce, and ginger; cook until heated through.
  6. Fluff the cooked rice and mix it into the skillet with the chicken mixture.
  7. Drizzle with sesame oil and toss gently to combine.
  8. Serve warm, garnished with chopped green onions.
