  • 2 chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup fresh or canned pineapple chunks, drained (reserve juice)
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup white or jasmine rice, rinsed
  • 2 tablespoons soy sauce (or gluten-free tamari)
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons vegetable oil or sesame oil, divided
  • 1/4 cup water or chicken broth

Instructions

  1. Prepare the ingredients: cut chicken, dice bell pepper, chop green onions, drain pineapple, mince garlic, and grate ginger.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides (about 5 minutes). Remove from pan.
  3. In the same skillet, add more oil if needed. Sauté garlic, ginger, and bell peppers for 2-3 minutes until fragrant.
  4. Stir in rinsed rice and toast lightly for about a minute. Add pineapple chunks along with reserved juice.
  5. Return chicken to the pan; stir in soy sauce, brown sugar (or honey), and water or broth. Cover and reduce heat to medium; cook for about 15 minutes until rice is tender and chicken is fully cooked.
  6. Fluff the rice with a fork and top with chopped green onions before serving hot.
