  • 1 cup small rice cakes (caramel or apple spice flavor)
  • 1/3 cup apple cider caramel sauce
  • 1/4 teaspoon salt
  • 3 tablespoons freeze-dried apples, ground to powder (optional)
  • 1/3 cup semi-sweet chocolate chips
  • 1/2 teaspoon cold pressed refined coconut oil
  • 1 packet green apple Pop Rocks candy

Instructions

  1. Crush the rice cakes in a mixing bowl and add salt, mixing well.
  2. Melt the apple cider caramel sauce in a double boiler or microwave until smooth. If using, blend freeze-dried apples into a fine powder and mix it into the caramel.
  3. Combine the melted caramel with the crushed rice cakes until evenly coated. Allow to cool slightly before shaping into small balls.
  4. In another bowl, melt chocolate chips with coconut oil until smooth.
  5. Dip each truffle into the chocolate, shaking off excess before placing on parchment paper to set.
  6. Before the chocolate sets completely, sprinkle with Pop Rocks candy.
  7. Let truffles cool completely at room temperature or in the refrigerator until firm.
