  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup fresh pineapple chunks
  • 8 small corn or whole wheat tortillas
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1 avocado, sliced or diced
  • Fresh lime wedges

Instructions

  1. In a large mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper.
  2. Add chicken pieces to the marinade and coat well. Let sit for at least 15 minutes or refrigerate up to 2 hours.
  3. While marinating, prepare the salsa by mixing diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a small bowl.
  4. Heat a skillet over medium-high heat and cook marinated chicken for about 5-7 minutes until golden brown and cooked through (internal temperature should reach 165°F).
  5. Warm tortillas in a dry skillet or microwave until soft.
  6. Assemble tacos by layering tortillas with chicken, fresh pineapple chunks, salsa, avocado slices, and any additional toppings.
  7. Serve immediately with fresh lime wedges.
