  • 10 ounces mini vegan marshmallows (for base)
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips (for topping)
  • 1 tablespoon coconut oil or butter

Instructions

  1. Melt the butter in a medium saucepan over medium-low heat. Add the mini vegan marshmallows and stir until smooth.
  2. Remove from heat and fold in the crispy rice cereal and crushed graham crackers until well combined.
  3. Transfer the mixture onto greased parchment paper and press into a ½-inch thick rectangle.
  4. Spread the chocolate spread evenly over the pressed mixture and sprinkle with remaining mini vegan marshmallows.
  5. Roll tightly from one long edge into a log shape using parchment paper as a guide.
  6. Wrap in parchment paper and refrigerate for 30–45 minutes until firm.
  7. Melt semi-sweet chocolate chips with coconut oil in a microwave-safe bowl, drizzle over chilled log, and slice into rounds for serving.
