Ingredients

Scale
  • 1 small overripe banana, mashed
  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. In a large bowl, mix together the melted butter (or vegetable oil), brown sugar, and mashed banana until smooth.
  2. Add in the egg yolk and vanilla extract; stir until well combined.
  3. Incorporate the all-purpose flour, baking soda, ground cinnamon, and salt into the wet mixture until just combined.
  4. Gently fold in the chocolate chips. Cover the dough and let it rest for about 15 minutes while preheating your oven to 350°F (175°C).
  5. Line a cookie sheet with parchment paper and drop spoonfuls of dough onto it, spacing them about 2 inches apart.
  6. Bake for 10 to 11 minutes until edges are set but centers remain soft.
  7. Allow cooling on the sheet briefly before transferring to a wire rack.
