  • 1 cup Cooked quinoa
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Cucumber (diced)
  • 1/2 medium Red onion (thinly sliced)
  • 1/2 cup Kalamata olives (pitted)
  • 1/4 cup Fresh parsley (chopped)
  • 3 tablespoons Olive oil (extra virgin recommended)
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper (freshly ground)

Instructions

  1. Prepare all ingredients: slice halloumi, halve tomatoes, dice cucumber, thinly slice onion, pit olives, and chop parsley.
  2. Heat olive oil in a non-stick skillet over medium heat. Fry halloumi slices until golden brown on both sides (about 2-3 minutes each).
  3. In a mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, and parsley. Drizzle with olive oil and lemon juice; season with salt and pepper. Toss gently to combine.
