  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line mini muffin tins or an 8×8-inch pan with parchment paper.
  2. In a bowl, combine crushed graham crackers with melted butter and press into the prepared pan to form the crust.
  3. In another bowl, mix cream cheese and sugar until smooth. Add eggs one at a time, followed by sour cream, vanilla extract, and strawberry puree.
  4. Pour the cheesecake mixture over the crust and bake: 20–25 minutes for mini muffins or 35–40 minutes for an 8×8-inch pan until set but jiggly.
  5. Cool at room temperature then refrigerate for at least four hours before serving.
  6. For topping, mix crushed Oreos with freeze-dried strawberries and melted butter before sprinkling over chilled bites.
