  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons granulated sugar (or honey)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional, but recommended)
  • 1/4 cup honey or maple syrup (optional, for added sweetness)

Instructions

  1. Prepare the strawberry filling by combining chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract in a saucepan. Cook over medium heat until thickened (5-7 minutes). Let cool.
  2. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. In a mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and cinnamon. Mix in cold butter until crumbly.
  4. Stir in vanilla extract and honey (if using) to form a dough.
  5. Press 2/3 of the crumble mixture into the pan as the base, then spread the cooled strawberry filling on top. Sprinkle remaining crumble over it.
  6. Bake for 35–40 minutes until golden brown and bubbly.
  7. Allow cooling completely before slicing into bars.
