  • 1 lb boneless skinless chicken breast or thighs
  • 1/2 cup cornstarch
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper (diced)
  • 1 medium green bell pepper (diced)
  • 2 tbsp vegetable oil

Instructions

  1. Coat chicken pieces with cornstarch, salt, and black pepper in a mixing bowl.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add coated chicken and cook until golden brown, about 5–7 minutes. Remove from skillet.
  3. In the same skillet, combine ketchup, rice vinegar, soy sauce, sugar, and pineapple juice; stir well.
  4. Add cooked chicken back into the skillet along with pineapple chunks and diced bell peppers; mix to coat everything in the sauce.
  5. Stir in cornstarch mixed with water; cook for an additional 3–5 minutes until sauce thickens.
  6. Serve hot over rice or noodles.
