  • 2 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract (optional)
  • 1 pinch Sea Salt
  • 1 cup Blueberries
  • 1/4 cup Pepitas (Pumpkin Seeds)
  • 1 cup White Chocolate Chips
  • 1 tablespoon Coconut Oil (optional)
  • 2 teaspoons Matcha Powder

Instructions

  1. In a mixing bowl, combine 2 cups of Greek yogurt, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract (optional), and a pinch of sea salt until smooth.
  2. Gently fold in 1 cup of fresh blueberries and 1/4 cup of pepitas.
  3. Spoon dollops of the mixture onto a parchment-lined baking sheet and freeze for about 3 hours until solid.
  4. Melt 1 cup of white chocolate chips with 1 tablespoon of coconut oil in the microwave, stirring until smooth.
  5. Dip each frozen bite into the melted chocolate, then return to the baking sheet to freeze again until set.
