  • 6 tablespoons granulated sugar
  • 4 tablespoons unsalted butter (melted)
  • 1/4 cup milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 cups mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with foil and prick the sweet potatoes with a fork. Bake for 40-50 minutes until soft.
  2. Lower the oven temperature to 350°F (175°C). Once cooled for 20 minutes, mix sugar, melted butter, milk, vanilla extract, and salt in a bowl.
  3. Peel the sweet potatoes and mash them into the mixture until smooth. Stir in the eggs until fully combined.
  4. Spread the mixture into a baking dish and bake for about 20 minutes until heated through.
  5. Scatter mini vegan marshmallows on top and bake for another 5-10 minutes until toasted.
