  • 190g graham crackers
  • 35g sugar (about 3 tbsp)
  • 75g melted unsalted butter (about 5 tbsp)
  • 32 oz full-fat cream cheese (4 8oz blocks), at room temperature
  • 325g granulated sugar (1 ½ cups)
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • 120g heavy cream (½ cup), room temperature
  • 240g sour cream (1 cup), room temperature
  • 1 tbsp cornstarch
  • 23 tablespoon lemon juice
  • 1 lb strawberries, roughly chopped in large chunks
  • 55g sugar (1/4 cup)
  • 1 tsp cornstarch
  • Juice of 1/2 a lemon
  • Fresh strawberries for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the crust by mixing crushed graham crackers, sugar, and melted butter. Press into the bottom of a springform pan.
  2. Beat cream cheese until smooth, then gradually mix in sugar, salt, and vanilla essence. Add eggs one at a time. Finally, incorporate heavy cream, sour cream, cornstarch, and lemon juice until smooth.
  3. Pour the filling over the crust and bake for 60-75 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar before refrigerating for at least four hours or overnight.
  4. For the strawberry compote, cook chopped strawberries with sugar, cornstarch, and lemon juice in a saucepan until soft.
  5. Serve chilled topped with strawberry compote and fresh strawberries.
