  • 1 cup Israeli couscous
  • 1.75 cups water
  • 1 can chickpeas (drained and rinsed)
  • 1 cucumber (diced)
  • 3/4 cup yellow pepper (diced)
  • 1/4 cup red onion (finely diced)
  • 1.5 cups cherry tomatoes (halved)
  • 1/3 cup parsley (freshly chopped for best flavor)
  • 1.5 tbsp oregano
  • 1 tbsp dill
  • 1/3 cup olive oil
  • 2 tbsp red apple vinegar
  • 3 tbsp lemon juice (freshly squeezed)
  • 2 garlic cloves (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground for aroma)
  • 1/8 tsp red pepper flakes

Instructions

  1. In a large pot, bring 1.75 cups of water to a boil. Add in 1 cup of Israeli couscous, reduce heat, cover, and simmer for about 10 minutes or until tender. Remove from heat and let it cool.
  2. While the couscous is cooling, wash and dice your vegetables: Dice the cucumber, yellow pepper, and red onion. Halve the cherry tomatoes. Chop parsley finely.
  3. In a mixing bowl, whisk together: Olive oil, Red apple vinegar, Freshly squeezed lemon juice, Minced garlic, Oregano, Dill, Salt, Black pepper, Red pepper flakes.
  4. In a large bowl, combine cooled couscous with chickpeas and all prepared vegetables. Pour over the dressing and toss gently until everything is well coated.
  5. Cover the salad with plastic wrap or transfer it to an airtight container. Refrigerate for at least one hour before serving to let flavors meld together.
