  • 4 ounces unsalted butter (very cold)
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries (hulled and quartered)
  • Additional ingredients for glaze: confectioners' sugar, vanilla extract, and heavy cream

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the flour, salt, baking powder, baking soda, and sugar until well combined.
  3. Cut the cold butter into small cubes and work it into the dry mixture until it resembles coarse meal.
  4. In a separate bowl, whisk together the egg, milk, and heavy cream. Add to the flour mixture and stir gently until just combined.
  5. Fold in the quartered strawberries carefully.
  6. Transfer the dough to a floured surface, shape into an 8-inch circle, and cut into wedges.
  7. Place on the prepared baking sheet, brush with egg wash made from beaten egg mixed with water, sprinkle with sugar, and bake for about 18 minutes until golden brown.
  8. Cool slightly before glazing with a mixture of heavy cream, confectioners' sugar, vanilla extract, and a pinch of salt.
